I will post one of my favorites:

Sliced goose breast (You have to convince the goose to give it up one
way or another) 1/2 lb.
1 12 oz can chicken broth, or homemade
2 jars sauerkraut (no cans, you can "taste" the tin) drained and rinsed
1 medium onion
3 tbsp brown sugar

Slice goose breast carefully, making sure any of the shot is removed. Slice thin.
Open, drain, and rinse sauerkraut
Slice/dice onion

Place all ingredients into a Crock Pot or slow cooker. Set on medium low, let cook for at least overnight. Serve as entree` or side dish.

marinade ur goose or duck in italian and worcheshire saue for about 4 hours take meat cut into 1/4 " cubes wrap in place pepper on meet wrap in bacon and cook until done tht is the best way to eat waterfowl i think

Crock pot on low. Two Breasts. Two can of cream of mushroom soup. Salt and Pepper to taste. Cook on low till fork tender. Shred meat while in crock pot with two forks. Serve over biscuits.

I put the breasts into ziplocks then put plenty of red wine in, and leave it in the freezer until I want to cook them.

Take them out, bread them and fry them. Tastes like roast beef.

Simple and you can add whatever spices you like.

I've worked in a restaurant on and off for the last 4 years. Started in high school and have come back during off times while in college. As a cook, I've spent all summer trying to figure out ways to adjust some of our steak marinades to create culinary masterpieces of waterfowling dimensions. I've got a bourbon marinade that I haven't tried yet, but I'm sure it'll come out well.

Equal parts Bourbon, lemon juice(no preference over fresh squeezed or store bought), brown sugar, and worchestershire sauce. Dice some onions and throw them and maybe a little minced garlic in there.

**a cheap bourbon works, but a high-end bourbon will probably make it taste better, especially if you plan on drinking whatever doesn't go into the marinade

Tenderize your breasts and allow them to marinade for 4-6 hours. Grill to rare, med-rare and you're looking at a great tasting piece of meat. Marinade ends up tasting sort of like a teryaki flavor after cooking. Serve with some grilled onions(sautee diced onion chunks in butter and flavor with pepper and garlic salt to taste) and maybe some grilled asparagus(coated in olive oil and salted/peppered to taste).

I realize this is the longest post ever, but this sounds like an awesome way to cook up some goose or duck breasts and plan a great meal.

i do something similar with duck, but marinade in a teryiaki sauce for a few hours. soak some tooth picks in water during this time and use them to hold the bacon on the cubes and throw'em on the grill on high. once the ends of the tooth pick start to blacken, which is usually no long then about eight minutes, dinner is served :D

cook six duck breast in crock pot for 12 hours on low with cream of mushroom soup, 1 cup water, tony's seasoning, ond onion. Shred breast after cooked and drain juices.

In large pot cook 1 family size box, or two regular size boxes of Zatarain's dirty rice. once boiling add shrimp, and cajun sausage. After adding the rice. Let thicken for about 10 min. then add shredded duck breast and a little salt and pepper. simmer for about 25 min. Hot sauce to taste.

Poor Man's Gumbo!!! and it is good. Will feed 5 for two days!! :lol:

i think the easiest one I've ever seen/eaten was teal or wood duck breast beat till tender fried with seasoning salt, with a pan of buttermilk biscuits. You are talking bout goooood, in a duck blind at slow thirty!!!! Us southern boys like to eat, so anything beats peanut butter and crackers, beef jerky, sunflower seeds..while hunting. Makes a great hunt even if you don't get a limit!

my favorite came from a world of beretta show

"argentina style duck sandwich"

Take breast meat.....duck size is perfect, or half of a goose breast"
-dry and place between two pieces of saran wrap
-pound with meat tenderizing hammer until thin
-coat with flower, shake of extra flower
-cover in beated egg, let extra drip off
-coat in cornflower flakes and fry in oil (or different crispy coating....i did mueslix and fried in walnut oil once and that was great).

melt pepperjack cheese slice over "tenderloin"
cut tomato, lettuce and a sunny side up fried egg
favorite toast, cut in half and best darn duck sammie ever!!

I take a duck or goose breast and cut into small thin strips, dip in buttermilk, roll in flour and fry on medium heat for 2 1/2 minutes and you got duck or goose fingers. GOOD dipped in honey mustard and it don't take long. My daughter and wife love t hem like that!
