I've always enjoyed broiling the breasts with bacon and jalapenos.
Recently i've tried slicing the breasts into strips and sauteing them and making stir-fry, or just sauteed duck sandwiches.

My family has always just stuffed them and baked them in the oven. Fried duck is also very good with onions and salt pork.

My two fav's.

Marinate the breast fillets in Tariaki marinade. Then bake them in a cooking bag and serve over rice.

The other is to cube the meat up. Boil it. Then put it in a crock pot with cream of chicken & cream of mushroom soup, potatoes, carrots & celery. Cook on low for a few hours & serve with sourdough or cresent rolls............................MMMMMMMMMMMMMMMMM MMMMMM

New one I tried out a week ago with a few woodies

Marinade:
Equal parts A-1, worchestershire, and lemon juice
Add garlic and oregano
Add just a touch of hot sauce(more if you want it to have some heat, less if not)

Let it marinate overnight, cook breasts to med/med-rare, slice into thin strips, and serve over a bed of rice and sauteed onions, peppers, and mushrooms.

It is one of the best tasting dishes I've ever made

Find a good chicken and rice...substitute duck for the chicken. :D

Keep this post going guys,I aint got crap for recipes on birds and I'm about sick of jerky, and stir fry.

Cut into strips marinade with Italian dressing, worstechire sauce, soy sauce and balsamic vinegar for 2 to 24 hrs whatever you got time for. Drain any extra marinade off and throw in bowl with Shore lunch breading of you choice and deep fry till they float. :lol:

sliced thin FRESH (in th blind)
sprinkle with creole seasoning
quick fry with your choice of oil
crack 4 eggs over the duck breasts

if it starts to burn cause you cook on high like me pour your coffee in there :lol: i swear it makes it better

Take 1 lg. Snow goose breast, or 2 nice sized boot lip (Spoonbill) breast....

1-12 pack of beer (of your choice)

Place the the goose or boot lips in to a big pot, then poor 11 beer into the pot with the goose.

Cook on medium heat for 20 minutes...

While waiting enjoy the 1 beer left from the 12 pack.

When the 20 minutes are over, take out the goose or the boot lips, throw it in the trash and drink the beer.

Only works on Snow's or Bootlips!!!

my favorite has been to marinade in your favorite marinade then cut into small peices, wrap them in bacon, stick a toothpick through it and throw them on the grill.

mmmmmmm good.

I tried this one with snows last year. cut breasts in half as if fileting them put in a bag with parmesan cheese shake it up and fry flip every time blood starts showing until done sound weird but its awesome.

put some breast in a large ziploc with some butter and garlic. mash em up in teh bag and the butter will slowly kinda melt as you do this. after 10-12 minutes take em out and grill em on a foil pan for a couple minutes. its the only way we usually make em.

Fry up a pound of bacon, use all that bacon grease to then fry up some duck or goose breast well done.

Put the duck and goose breasts in a blender and shred it, use it as a spread.

Put it onto anything you like a meat spread on, sandwich, in a taco etc....

Cut into cubes, butterfly the cubes, marinate over night in Italian dressing or your favorite marinade. Grill them to medium rare, wrap with a piece of bacon, and for divers add a jalapino pepper. In a seperate pot, melt 1/2 stick of butter mixed with 3 tablespoons of molassas, pour over duck cubes...This is awsome, and I got this recipe from a chef. The molassas with the butter actually carmalizes over the ducks.
He also said the problem with people cooking ducks, is that they treat them like poultry too much, insted of a normal piece of red meat.

I have tried some awesome recipes... problem is after a week they all make me queezy just thinking about eating them. Dont get me wrong they always get eaten. I just rather load them with mcormick seasoning and werchster souce on the grill.
