View Full Version : Aging Waterfowl
I was talking to a guy a few weeks ago who was telling me about aging waterfowl before eating it...Does anyone have any experience in this? To me it just sounded disgusting leaving a duck or goose either laying on a cold garage floor or in a fridge whole for 3-5 days before cleaning it :shock:

Sounds like AGING=LAZY...
If it's colder then my fridge I've waited till' the mornin', but days long aging?....I think quicker to the freezer the better. I've read that it can take 72 hours of being frozen to kill the dangerous bacteria in wild game meats. But then again it's just my opinion.

Thats what I said and this guy was insisting on how good it makes it taste and how tender the meat is....I thought he was pulling my leg at first, but the more detailed he went on I knew he wasn't bs-ing

Ive heard or at least i thought i did, from a pretty good source,(emeril lagasse on tv) that aging meat made hit have better flavor. I could be wrong but I think he aged a roast for like 3 days...

yeah i have... i puked in my mouth... but i spose if you did it in less than one day it wouldnt be as bad...???
I have no clue, I generally put mine in REALLY cold water with a tad bit of salt for 8-24 hours, but they are already cleaned, all fat and silver skin trimmed, etc.
The idea of it sounds sick to me too...but this guy made it sound like all kinds of people do it and said about even hanging a goose outside by a rope and supposively that old timers would know it is aged when the head detached from the body :shock: :shock: :shock: and he was thinking of trying it...this guy was no backwoods guy either I was talking too

if mine sit for 2 or 3 days before i clean it, i'm not going to eat it.

i cant leave mine lay for 2 days cause the damn cats will eat it before i get a chance,,but ill let some sit in the freezer for a year then eat em,,i think that tastes much better,let er get good and soaked in marinade!!

iv done it but only 2 days top, the only thing is it dont work in later season beacause they freeze and that kinda defetes the purpuse. the best way to do it is cut the head off then hang it by its feet and let the blood drain. wether it made the meat taste better i dont know it didnt seem worth it to me.

sounds kinda gross to me. I don't enjoy cleaning them when they're fresh.

I've never heard this about geese, but seen a guy do it with deer. There is a house across from the local redneck pub and this guy leaves his deer hang in the tree for like two weeks. I let mine hang a couple if it's cold but this guy doesn't matter how warm. It was like 50 degrees this year and left them out. The meat turned all black and disgusting. But he does it every year so I guess it doesn't kill him.
