What do you guys do with your goose meat? We just took i our meat last week. We got 10lbs pepper sticks, 36 lbs jalapeno cheddar sticks, and the rest my roomate and his dad are doing Jerkey. Just curious as to what everybody does.

I give it away to an Asian family with 6 kids. I think they eat the beaks feathers and feet.

I can not stand the stuff. I just like killing them.

I make alot of jerky. Also took some to a smokehouse and had it smoked. Tastes alot like ham.

In the middle of the season we did some Jerkey and we tried goose pepper and goose cajun. We really liked the cajun flavored Jerkey.

we do jerky and make summer sausage out of it. the suasage tastes just as good as deer. i love it

Jerky all the way. I really can't stand to eat it any other way. I make my own jerky. It can take a while, but it tastes just fine and saves quite a bit of money.

I make alot of jerky with ours. Also fix it with rice and green beans. I cut up the breasts into strips, brown them in wine and Teriaki sauce. When the meat is nice and brown I take minute rice and pour all over the top of it. Do not drain it. The juice from the wine and Teriaki will be soaked up by the rice. Pour the green beans over the rice and let the juice of the beans cover the rice as well. Simmer until rice is tender. Makes a great meal. My family loves goose cooked that way. That is about the only way I have found to cook up goose meat.

Goose fajitas rock. Strip the meat and soak it in blasamic vinegar. The vinegar will cook the meat for the most part so you just brown it. Stays tender and anything is good with guacamolie and salsa.

We donate a lot our meat to a couple local needy families. But the stuff we keep, we cook a lot in the crock pot and in a skillet! The wife is big into Tastefully Simple (like Tupperware Parties, but with food)...and she gets this Happenin' Habanero BBQ sauce. Take a couple goose breast and cut them into 1" X 1" cubes. Marinate them in the BBQ overnight at a minimum. Drop the whole mixture into a skillet on medium heat. Heat until brown, dump in a bowl and serve....MMMMMMMM GOOD!!!!!!

We usually make ours into jerky and sausage. We also BBQ and pan fry a lot of it as well.

thinly sliced marinated and grilled with a little garlic salt med rare is pretty good also.

I was wondering about having sausage made, I love deer sausage but have never had goose sausage. Do you guys just take all your meat from the season to the processors frozen in bags, because i have a lot of it and was wondering if you could take them like 10 frozen bags of meat or if it had to thawed first.

Just curious sound yummy!

yes, just take it to the butcher as you would venison. keep it frozen and let them thaw it, bring em as much as you want. had a buddy bring in the meat from a whole season kills, like over 25lbs of meat.

we cook the honkers in the crockpot as well as the ducks. My Aunt gives me a lot of recipes to use so it tastes pretty good.

We took like 46 lbs just on our order. And another 40 lbs on another order. The guy said they have had people bring in like 200 lbs before. We could have gotten close but we didnt want to pay that much. At $3.50 a pound it was getting expenseive

Put in crock pot with an old piece of leather. Cook over night. Throw out the goose and eat the leather :lol: :!: :!: Is there really a good way of making them edible short of covering that nasty goose taste with something that we like :?: :?:

Are you kiddin me? If you think geese are bad tastin and tough I think you over cook them. Except in the crock pot you can't over cook them. I like to slice them up marinate them and grill them just enough to brown them and they are quite tasty. Also did the fried rice and strips. Hell we even eat the legs sometimes. :shock: Slow cook them and shred them and put them in with noodles. Goood. Take what's left before next season and make jerky.

Great thread Luke.

I made a pot of chili, loaded up with lots of jalapenos :evil: I also made a Thai stir fry dish with a spicy ginger sauce. The there was to not cook the goose past medium rare.

You guys have me curious about sticks and jerky now.

Barry, 45 pounds of the 46 that Luke had was meat from the 46 geese I killed when I was out there. :wink: So I guess it's kinda my fault his freezer couldn't hold the last day's meat. :lol: We bagged up the meat and set it all in a cooler outside. :lol: :lol: :lol: There were alot of tv dinners and ice cream that was taking alot of the freezer room up, right Luke? :wink:

Nope, just me! I was normally killing anywhere between 3-6 geese per flock, with 3 shells of course. :lol: :wink: :shock: :? And the IKC definately DID NOT kill all the birds out there. It was hard to tell who was shooting what, but I def. saw Luke piss pound a few ducks and geese.....one of which was the elusive speck. Plus Luke is in the IKC...-CO chapter. :D

correction here, that 25lbs was just one of the guy's early season amount of meat. they brought in over 100lbs worth from the 4 guy's entire season not counting what they ate. my one bud shot 185 geese last season, he was down from the season before where he shot over 250 himself.

Good lord.... That is a lot of geese. 2 of us shot 182 geese last year over 34 hunts and we thought we had a good year... WOW he stacked them up. Maybe we should have gone on a few less duck hunts?

We had a hard time eating and giving away our birds to stay within possession limit. I can't imagine doubling that number and still trying to do it. But then again our possession is only 6 :evil: They should at least make it 9 so one could shoot a 3 day weekend and give the meat time to soak or marinate....

I was under the impression that if you have them breasted and cleaned and in your freezer you were ok as far as possesion limits go. We just saved all our meat from the whole season and took it in last week. We still have probably 40lbs left in the freezer even after we took the meat in. If anyone could shed some light on this issue that would be great.

Don't know about Colorado :?: but in Kansas the possesion limit is 6 and I think that includes anything in the freezer :!:

My buddy CSUguy said that if you have them in the freezer it doesnt count against you possesion

It doesn't matter what state you are in. It is a federal guideline. Federal guideline supersedes all state guidelines. (This gets very tricky in texas.)

Possession Limits includes all birds in your possession regardless of what condition they are in. It doesn't matter what location they are in rather that be car, freezer, fridge, front yard, boat, etc. Slice em, dice em , breast em, leave em whole, whatever. They all count towards your possession.

You may GIFT one possession limit to every person that lives in the house. Possession limit does not count against birds taken from the previous year / season.

So if you have an early season limit of 5 /poss 10
Regular season limit of 3 pos 6, You could theoretically have 16 geese in the freezer per person.

Now, how they can tell when a frozen bag of goose breast was harvested beats me. But that is the law. This law, like so many others, is open to interpretation and used at the discretion of the officer. For example speed limit is 70, but you are doing 71. Could you be issued a citation for speeding? MOST CERTAINLY! Is it likely, no.

our problem is we hunt with a lot of different people and they seem to always give us the birds to clean. I live with 4 guys so it shouldnt be a problem. We do have meat in different houses in different cities so I think we would be ok. I was just curious. It seems like possesion limits are a little vauge.

I grille some...make fahitas like Kelly...I've had excellent BBQ made out of it....ask Susquiedrake for that recipe....and this year I started making my own jerky....comes out awesome...you do it with a kit you can buy at Cabelas.....and you just dry it in the oven.....there is tons of stuff you can do with it......

i just spoke to my local DNR officer about possession limit and gidelines, some states may vary from this my does not.

once the bird has been processed and is in edible state IE: meaning ready to eat (im sure you know ths phrase) it is no longer considered part of your bag limit. so if a person was to shoot there limit everyday of the season and processed there game that same day, they are not in violation of any game laws. this also falls into the transportation of wild game, once it has been processed and in an edible state it is not a violation to transport lets say 100lbs of meat to the butcher for further processing.

i hope this info was helpfull to you and everyone else.

if you have any concerns on this i suggest you contact your local CO for more information on this subject.

Barry, that may be your state law. But the Federal law is different. This is exactly the same issue that is happening in Texas.

Did you talk to a Federal or State Officer?

I can totally see where if it was in sausage, jerky, etc it would fall outside of the guideline. However, I don't think breasted out and in the freezer is ready to eat.

This is a vague law and open to interpretation. EXACTLY why we need less laws!

I actually think the UFWS lost its largest court case on possession limits. The court said something to the effect "once it is ready for consumption it no longer counts against your possession limit"

I was worried last year once I got up to 125 lbs of goose meat what to do. The USFW still maintains and says possession is possession and has not and does not refer to the courts decision.

my local state CO, and these are michigan laws not federal. although the state should adhear to the federal laws. i was told like i said, once its in the "edible" state whether frozen or not it is not considered part of your bag limit.

honestly i think whoever it is that writes these laws, do they actually know what there saying and how do you interpret what they are saying. im no politician and i dont think they even know what there saying.

this whole ordeal is a cluster flop as far as i'm concered, these guy's that write the laws need to pull there head out and make it user friendly...do you agree ? :lol:

Hammer and Barry I completely agree with both of you. Not trying to start any pi$$ing match or anything of the sorts. I hope that none of this was taken that way.

The laws are BS and open to interpretation by the officer, and ultimately by the judge if necessary. They need to be changed so that it is clearly this or most definitely that. To much gray area. It's sad state when they worry about passing laws for the sake of passing them, and not for what they say.

Man that would really bite in my state, Bag limit of 8 Pos. of 16 in the early season, and regular season its Bag limit of 2, and Pos. of 4......so the way the federal law is written, that i personally would only be allowd a total of 16 breasts in my freezer to abide the law, and anything over would be a violation.......now haveing 3 people in my house hold would allow me 48 breasts in the freezer.....but heres the kicker, we shot over 180+ geese this season, dont know how many hunts, but probably about 6 of us total hunting.....and most of the breasts went straight into a buddy of mines freezer, not that i dont like goose meat, but im about the only person in my house that would eat it, but my buddy processes it and make Jerky for everyone, so he took most of the the birds, now i would estimate, that over 150+ of those birds shot went to his freezer, and he still has a bunch of them, left over that he will eat, saute, grill, jerky, and however else he eats it, concidering theres only 2 people in his household, by federal law is he in a Major Violation....?...also...say you shot 2 geese, and had them in the freezer for mounting with the amout of processed meat that you have in your freezer, would this then add to your possesion limit...????.....since those birds were obviously never breasted, or cleaned??

Just me killing geese i dont shoot a crap load that i have to worry about what to do with them so using the crockpot works good for me.....i eat the legs and the neck on them earlier in the season...its good....but when i get to the middle of the season i usually just breast them
