So after all is said and done, what are some of your favorite ways to prepare Waterfowl. Hoosier Hunter and myself like to make Jerky. We do a 50% mix of Duck or Goose and Ground Beef for fat. We use a lot of different spices and seasonings mostly from High Mountain, but a lot of just mixing different things from the spice cabinet. My brother in law fixed goose prepared in italian dressing and some other homemade brew and it was fabulous. Any other good ideas please post so we can try them out. :idea:

I like to make jalepeno duck breast. You just need some duck breast, teriyaki sauce, jalepeno slices, bacon and toothpicks.

Cut the breast into strips; about three per breast. then you marinade the duck in teriyaki for three to four hours. Take the chunks and cut a slit in the breast and lay a sliver of jalepeno pepper in there and then wrap it in bacon and stick a tooth pick through it and grill it. You will have to play around with how much jalepeno you like. Most of the bite of the pepper will cook out, but if you get the right pepper you can make it pretty hot.

Another helpful pointer I picked up for grilling duck is to buy a basket that you would cook over a campfire with and place the duck in there. If you have a lot of smaller pieces of duck on the grill it will save time and make it easier to cook.

One way I like to make my duck is in the slow cooker. First I cut the duck breast into strips. Then but them in a pan and brown them and season them and add a some diced onions. Put one can cream of chicken soup and one can of cream of mushroom soup, one soup can of milk.

Put it all in the slow cooker for about eight hours.

i can cook duck anyway and its good, goose on the other hand is different, for goose i will cut the breast in cubes wrap in bacon and grill, or my favorite BBQ goose best way to cook goose, take bout 3 decent sized breast cut in halfs, put in crock pot then pour beer over them until the beer covers the breast, then let them cook in the crock pot on low for bout 8 hours, then take em out pull em out and pull apart meat and shred it, put it back in add favorite BBQ mix and cook on low for bout 4 hours and awesome goose bbq samiches

I have a recipe similar to dux 99's recipe. Just inject your favorite marinade into duck breasts, pour excess marinade over them in bowl, and put in fringe for a few hours. I like to precook the bacon because the duck will be done before the bacon gets all the way cooked. I cook the bacon, wrap it around the breasts, and toothpick them. Then throw them on the grill. I like to cook them for about 3 minutes on each side, depending how hot the grill is. Also, don't over cook them because duck gets really tough if it is overcooked. You're lookin' for about a medium rare. Them bite into one of the little morsels. I've only doen this twice and even the first time they were pretty delicious. I even got JClasen0124's mom to eat a few teal breasts!!!!!

Slice goose breasts with the grain into 1/2 inch thick slices.Throw meat into slow pot cover with apple cider and a little brown sugar,let simmer 7-9 hours on low.When meat is done remove and shred meat with two forks or just shred by using your fingers. Discard all liquid from slow pot,place meat back in pot and add your favorite bbq sauce, diced onion,peppers of your choice let simmer 45 min. Use your favorite roll or bread,some tater salad,handful chips, couple cold brew's HEAVEN man I tell you HEAVEN.

I like to make goose gumbe, got the recipe from the Sportingchef.com, I had guys at the fire house who refuse to eat wild game, go for seconds.

Also like having slim jims made out of geese.

We make a lot of jerky, I'm definitely going to try some beef sticks this year, nice and spicy! :D All this reading recipes is making me hungry!!

I like to smoke goose breasts then cube it after smoked to your liking. Throw in the crock pot with some BBQ sauce and a couple cans of baked beans (got my mom to eat goose).
Also for those spring snow hunters I usually turn most, if not all of our kill into jerky and snack sticks. Go to a grocery store or sporting goods store and get a "waterfowl" jerky cure or jerky seasoning. Slice the breast in 1/4 inch strips using a meat slicer. Coat w/ the seasoning and then head to the dehydrator, smoker, or oven. Use this on alot of canda geese also.
Ducks I have tried everything but the best that I have tried yet is by cooking some red, green, and yellow peppers onions and mushrooms in a olive oil(kinda like a stir fry). When the veggies get close to being done add duck breasts(cubed) with some garlic and butter, the breast will cook fast because everthing is steamin' hot. With the duck breasts you can marinate them in your favorite marinade, I usually use Italian dressing or a can of OLD MILWAUKEE.
Thats all I can think of right now.

This one is really simple and my wife even eats it!! Take 2 goose breasts cover in A1 Marinade sauce. Let it sit in the fridge for a couple of hours and grill. You may have to cut the breasts in half if you like it more on the well done side. Simple and easy

Take a whole duck cut them up the back and mash them down so they lay flat. Then marinade them in teriyaki sauce over night then put um on the grill bones down for about 1hr 45 min low to med heat. Warning this may cause your tounge to slap your brains out :lol: :lol: :lol:

another one i do is take a duck breast preferablly a mallard, get some wax paper and a meat hammer of what every you call em, take the breast and butterfly it out, lay it on the wax paper and beat it flat and then take the breast and bread it with your favorite breading, then take it and throw it in the deep fryer for 5 or so minutes at about 350 to 400 then put it on a bun and put your favorite toppings on it for a sandwich, onions and some hot sauce is my favorite
